Jowl bacon is the fattiest of the bacons and has a rich, almost smoky/sweet flavor different than traditional (from the pork belly) bacon. It can be cooked like the other bacons. If you've never had it, give it a try! With its distinctly different texture, you just might prefer it over the bacon you're used to.
